From Fermented Milk to Modern Microbiology: The History of Probiotics
Every live-culture supplement on the market today traces back to a simple problem: how do you stop milk spoiling? The answer took nine thousand years to explain.

01Fermentation came first, science came later
Historical research traces fermented-milk practices in the Middle East to at least 7000 BC, spreading from there across Eurasia. For most of that time nobody had any idea why it worked. Milk left in the right container at the right temperature soured rather than rotted, and stayed edible for longer. That was enough.
Traditional fermented dairy is not one continuous “probiotic tradition” but a set of diverse regional practices. Many relied on spontaneous fermentation or on back-slopping — using part of one batch to inoculate the next. Modern sequencing studies of these products find diverse microbial communities that vary by region and process.
021905: one organism, named
The turning point was isolation. In 1905 the Bulgarian physician Stamen Grigorov isolated and described the organism responsible for traditional Bulgarian yoghurt. Once a single fermenting bacterium could be separated, cultured and named, it could be studied — and compared against others.
031907–1908: Metchnikoff, and the idea that stuck
Élie Metchnikoff, working at the Pasteur Institute in Paris, had noticed that populations in Bulgaria and the Caucasus who consumed large quantities of fermented milk appeared to live unusually long lives. He proposed that acid-producing bacteria might suppress putrefaction in the intestine, and set the argument out in The Prolongation of Life in 1907. He shared the Nobel Prize in Physiology or Medicine in 1908, and around the same period his company Le Ferment produced early preparations containing selected lactobacilli.
His specific theory of ageing through intestinal auto-intoxication was later revised. That is normal in science and does not diminish what he achieved: he made intestinal bacteria a legitimate research subject and triggered a wave of public interest in fermented milk that has never entirely subsided. The accurate way to describe his role is that he helped stimulate scientific interest — not that he proved anything about longevity.
04The twentieth century: scale, then catalogues
Production industrialised. Kefir was being made on a large scale in Russia by the 1930s, supplied to hospitals and the general public. Alongside industrial scale came something less visible but more consequential for today’s supplements: national microbial culture collections, established to deposit, catalogue and permanently preserve individual isolates under reference codes.
A deposit code is what turns “some Lactobacillus acidophilus” into a specific, retrievable, reproducible organism that a laboratory anywhere can request and test. It is the reason strain codes on a supplement label are worth more than the species name printed above them.
05What heritage can and cannot tell you
Historical lineage is genuinely interesting and completely non-probative. That a region has fermented milk for millennia does not establish that a modern isolated strain descends from that tradition, nor that it produces any particular effect. Probiotic effects are strain-specific and use-specific: a species name, a high count or an old story does not by itself establish a health benefit.
Read heritage as context for why a strain was collected and studied. Read the certificate of analysis for what is actually in the box.
